What a pretty image of this unusual holiday. I too am conflicted on this day and how to "celebrate" it. In Ukraine they have at least seven Independence days and celebrate all of them (they have been invaded so many times).
I have a vague recollection of watermelon seed spitting contests (to see how far you could spit them) happening when we were kids. Did we do that, Laura? Or is that something I did with my neighborhood friends?
Whoever wins has the rights, for one year, to the nickname, The Spitter. How’s that for disincentive?

So interesting, and I wonder if the U.S. will find itself celebrating a second independence day down the road. In the meantime, yes! Watermelon!
